Dive into a seafood extravaganza with Fresh Sushi, Crabs, Calamari, Lobsters, Oysters, Scallops, and many more delicious treats from the sea.
Embark on a journey to the Collective restaurant, where you are thrust inside of the faux environment encapsulated between the hulk of giant boats seemingly trapped into the roof of the hotel ceiling and the rain-forest below which traverses over bridges, streams and waterfalls, creating the surreal feeling of being stuck in an underwater amazon rainforest.
So many notable dishes on the night but to call out a few, from the Sea bass Tartar and Octopus Salad to the Freshly made Seafood Provencal and freshly made Seafood pies. The spices used added an element of Levantine flair to dishes that could otherwise be quite run of the mill. All of the dishes in Levantine were superbly executed with a Persian style and with everything served inside saucepans, the dishes tastes kitchen-fresh, with still very flavoursome and some still boiling as they touched our plates.
There are so many interesting takes on traditional seafood dishes, and in particular one of the non-seafood dishes…the American sloppy joe which went well with the fresh, hot and spicy chilli chips from the Indian station at Bombay café. The condiments also give "more success to your dish" as the sign so aptly says....with the extra details really making a huge difference with the addition of smoked, chilli, lemon, rock salt and different types of flavoured mustards.
We chose to sit and enjoy the pleasant atmosphere next to the hot ovens in a booth which made a difference from being sat in the open expanse which you can sometimes leave you feeling slightly isolated as if you are in the hotel lobby.
